DJ made dinner (wok-ed some veggies/chicken in a lime jalepeno chimichurri (sp?) sauce since i can't have any soy at all or my stomach goes ballistic)...roasted root veggies in the oven roasting away deliciously...chili cornbread baked. lemon loaf experiment a-baking now.

Dinner was quite the um...obstacle. DJ wanted to make stir fry. So we went grocery shopping & found a teriyaki sauce that was GF and that had soy as one of the last ingredients. I was like "Yeah - I should be fine I'm not *that* sensitive" (ha!)
DJ actually made me taste some of the GF teriyaki sauce he was going to use tonight and within about 5 minutes I had stomach cramps. From like, a little eensy bitsy teeny tiny shminsy spoonful. BULLLLLLLLLSHIT!
I hate my stomach sometimes.
But DJ is the best. He was like "Well, we won't be using that tonight", put the rest of the bottle in the fridge and then rummaged around in the cupboard until he found something else to use, ingredient checked it etc. and just kept on prepping.

I love this man so much I could just burst into tears from overwhelmingness of love (does that makes sense?)
He's just so laid back and easy going about everything. I mean - I freak out & get waaaay more frustrated than he does. *lol* (I'm also on the rag so today may not be the best day for like "let's compare being sane" kind of situations).
Anyhow. Good thing we tested it b/c otherwise I would have had massive stomach cramps & would not have been able to do the food prep/baking tonight for the week. I think I actually have enough sandwich bread still from last week so instead I attempted a lemon loaf...DJ has been bugging me about one for a week or so ago when I first threw the idea out there. Also made some (not)skillet cornbread with chilis to go with the roasted vegetable chowder for lunches this week (Well for me at least. DJ is not a soup man. Unless it's potato & meat soup *hehe*) We have sandwich meat/bread/veggies for him.
Anyhow so kitchen is clean from my numerous baking experiments. Going to post the recipe for the roasted vegetable "chowder" (it is some serious kind of fucking OMNOMNOM!). The cornbread I have to work on b/c it kind of falls apart. Although if you let it completely cool it is better - but still a bit crumbly.
Hrrm.
I'll think about it. Tastes fucking awesome though! :)
OK stomach is actually hurting after eating cornbread.
*sigh*
No idea why. It should be okay. No wait, I used non-GF cornmeal. Is that it? FFFFFFFFF...
Worried about the lemon loaf. It was my first straight conversion recipe that I am trying (as in - I took a recipe from Canadian Living and made it GF...so...the batter looked a little um. weird. Yeah we'll see. *lol*)
